8-Minute Elotes (Mexican Corn)
We make this corn for the market in our small town and have gotten so many requests for the recipe. It's really easy and makes the perfect Taco Tuesday side dish.
SERVES: 6 ACTIVE TIME: 3 minutes TOTAL TIME: about 8 minutes INGREDIENTS:
1 bag frozen corn (we prefer white) 2 T. water 2 t. TACO AF seasoning mayonnaise cotija cheese Place corn, water, and TACO AF in a large skillet over medium-high heat. Cover and cook until hot, approximately 7 minutes. Serve hot topped with mayo and cotija cheese (use parmesan or queso fresco as a substitute). |
