Enchilada Stuffed Baked Potatoes

SERVES: 6
HANDS-ON TIME: TOTAL TIME: POTATO 4 medium to large baking potatoes 1 tablespoon olive oil 1 medium white onion, chopped 1 pound lean ground turkey(chicken or beef work well too) 1-2 tablespoons Spicy Me Taco AF salt and pepper 10 oz enchilada sauce or chile CHOOSE YOUR OWN FLAVOR ADVENTURE: Shredded cheese, Sour cream, Cilantro, green onion Avocado, Jalapenos, Pico de gallo, Hot sauce |
COOK:
Heat oven to 400 degrees F. Wash potatoes and pierce several times with knife or fork. Wrap in aluminum foil and bake for 1 hour or until easily pierced by a fork. 10 min before potatoes are done, start cooking meat. Add oil to large pan and cook your meat with the chopped onion until completely cooked through and onions are tender. Drain if desired. Season the meat Taco AF and add the enchilada sauce. Cook until hot.
ASSEMBLE: Remove foil from potatoes and make a slit lengthwise down the middle. Push both ends of potato towards each other to open it.
Fill with a couple generous spoonfuls of the meat mixture and add the toppings of your choice. Enjoy!
